<p>이러한 첨가물은 고기의 색을 선명하게 유지하고 부패를 막는 역할을 한다. 문제는 이들이 몸속에서 &lsquo;니트로사민(nitrosamine)&rsquo;이라는 발암물질로 전환될 수 있다는 것이다. 특히 고온에서 조리되거나 기름에 튀길 경우 니트로사민 형성이 활발해진다. 세계보건기구(WHO) 산하 국제암연구소(IARC)는 2015년, 가공육을 1군 발암물질로 분류하며, 꾸준한 섭취 시 대장암 및 위암, 심혈관질환의 발생 위험이 높아진다고 경고한 바 있다.</p>
